In fact, the butterfly spent the rest of its life crawling around with a swollen body and shriveled wings. It never was able to fly.

What the man in his kindness and haste did not understand was that the restricting cocoon and the struggle required for the butterfly to get through the tiny opening were Nature's way of forcing fluid from the body of the butterfly into its wings so that it would be ready for flight once it achieved its freedom from the cocoon. Sometimes struggles are exactly what we need in our life. If we were allowed to go through our life without any obstacles, it would cripple us. We would not be as strong as what we could have been. 一、 最简单的和最香的鸡汤：三七全鸡汤（三七====一种中药，在医药店有售40克够了）主料：光鸡一只（要土鸡或乌鸡）洗净配料：三七（要蚊帐包好），一小根党参，干桂圆肉6--8粒，红杞小许 红枣8--10个，香菇4--6个（用温水泡10分钟）调料：盐，味精，黄酒一两，姜，葱条一起洗净放入一只碗备用。首先：把调料放入鸡肚，再把配料放进去最后把三七包放入。其次：取一只大沙锅（也可以用铁锅，味道差点）把鸡放入，加满水，上煤气炉烧沸放入红枣和香菇后移到炭炉上煲四个钟头即可。记住水如果不够必须加水。特点：鸡肉入口即化，鸡汤香甜，提神补气，三七是一味很好的药材。

1、宰活鸡吃冻鸡

我们都习惯去市场买活鸡，现场宰杀回家就炖汤，恨不能中间不耽搁分秒。实际上这是不对的。鲜鸡买回来后，应先放冰箱冷冻室冰冻3~4个小时再取出解冻炖汤。这跟排酸肉的原理是相同的，动物骤然被杀，体内会自然释放多种毒素，而且刚宰杀的热肉细菌繁殖迅速。冷冻既杀菌，也让肉从“僵直期”过渡“腐败期”到“成熟期”，这时的肉质最好，再来炖汤做菜明显香嫩。

2、飞水—必需功课

其实，不光是鸡，任何肉类炖汤前都应先将主料飞水—就是开水里煮一下。这不仅可以去掉生腥味，也是一次彻底清洁的过程，还能使成汤清亮不混浊，鲜香无异味，一试就灵。当然，飞水也是有学问的。若冷水放肉，肉由水的冷到开，经历了一个煮熟的过程，营养流失严重。最宜温水下锅，煮约7~8分钟，不盖盖并适时翻动。开水下锅也行，3~5分钟即可。

3、下锅—水“生”火热

炖汤则宜冷水下锅，让原料由水温的慢慢升高而充分释放营养与香味。与水同温下锅的原料更能熬出好味道，所以，一定要记住，飞完水后的原料要立即用冷水冲凉再入锅炖。

4、火候—猜大猜小

炖鸡汤应先大火约10分钟烧开再转文火，开的程度应掌握在似开非开，因为砂锅有很好的保温功能，若等沸腾时再调小火，它的后继沸腾过程对汤品的“鲜”是一个损失。而且这10分钟里千万不要揭盖，“跑气”了的汤就没了原汁原味。

5、放盐的学问

对于炖汤来说，这还是个不小的问题。放盐的时间在某种意义上能主宰汤的口味。不管是有的人说下锅时就放盐，还是半熟时放，都不对。盐煮长了会与肉类发生化学反应，肉类里的蛋白质被锁定，汤味淡，肉也炖不烂。那么盐该何时放好呢？记住了，盐和别的调味品一定要在汤已炖好时放。放盐后转大火10分钟再停火，中途不揭盖，不光味道全进去了，而且汤味更浓。注意，放盐进去后不要搅拌，那会留下一股生盐味

二、鸡汤, 最重要的是鸡了.从市场买来鸡，买那种土鸡 ,要母的越老越好, 老母鸡汤 , 公鸡可不能做汤.炖汤一定要买活鸡,做出的汤才新鲜的,叫老板帮你宰杀好，拿回家洗净剁成块（也可以炖整鸡）。锅内(大的深沙锅 )加清水（要多），放入鸡，加姜葱、花椒、料酒少许烧开，改用小火炖至鸡肉软烂，加盐、味精调味，拣去姜葱就可以了。

也可以加点沙参、红枣、枸杞、白果等。如果是女士，可以用乌鸡，加点阿胶、当归等。 主要是大水量，小火力，长时间，后调味。

当归：补血活血，调经止痛，润肠通便

阿胶：补血止血，滋阴润燥

沙参：养阴清肺，宜胃生津

三、多种鸡汤的做法

1、清炖鸡参汤

主料：水发海参400克，童子鸡1500克，火腿片25克，水发冬菇50克，笋花片50克，鸡骨500克，小排骨250克。

辅料：精盐6克，料酒35克，葱10克，姜10克，味精5克，高汤1000克。

制法：

①将发好的海参洗净，下开水锅汆一下取出。

②鸡骨、小排骨斩成块，与竞童子鸡一起下开水锅汆一下取出，洗净血秽。

③冬菇去蒂，洗净泥沙待用。

④将海参、童子鸡放在汤碗内，将笋花片放在海参与童子鸡间的空隙两头,火腿片放在中央，加入料酒、味精、精盐、葱姜、鸡骨、小排骨、高汤、盖上盖子，上笼蒸烂取出，除去鸡骨、排骨，捞去葱、姜，即可食用。

2、鸡汤煨豆花

原料：石磨豆花800克 熟鸡肉50克 鸡汤1000克 菜心50克 葱花10克 精盐、胡椒粉、味精、化鸡油各适量

制法：

1．熟鸡肉撕成丝；菜心入沸水锅中汆一水，捞出漂凉。

2．炒锅置火上，掺入鸡汤烧沸，下入沥干水分的石磨豆花，调入精盐、胡椒粉、味精、化鸡油，转小火煨约20分钟，起锅装入窝盘内，撒上熟鸡丝和葱花，点缀上菜心，即成。

特点：汤鲜味美，豆花细嫩可口。

3、芪归炖鸡汤

[原料]

小母鸡1只（约1000g），黄芪50g，当归10g，精盐5g，胡椒0.5g

[做法]

1、活鸡宰杀，去毛及内脏，剁去鸡爪及嘴壳，用清水洗净。

2、黄芪去粗皮，与当归均洗净待用。

3、砂罐洗净，放清水400g，放入全鸡。烧开后撇去浮沫，加黄芪、当归、胡椒，用小火炖2小时左右，鸡肉同时加入精盐，再炖2分钟即可食用。

4、天麻炖鸡汤

【来源】民间药膳方

【原料】天麻片10克，老母鸡1只，生姜3片。

做法】将天麻洗净，生姜洗净切丝，老母鸡杀后去毛及内脏，填入天麻片和姜丝于鸡腹中，放入炖锅，加清水适量，武火煮沸，再改用文火炖至鸡熟烂即可。

5、木耳金针乌鸡汤

基本材料 乌骨鸡1只，黑木耳15克，金针菜30克

[制法]：将乌骨鸡剖净，去内脏，洗净斩件；黑木耳、金针菜用清水浸软，分别用清水洗净，与乌骨鸡一齐放入炖盅内，加清水适量，炖盅加盖，置锅内用文火隔水炖3小时，调味供用。

[功能]：清肠解毒、补益脾胃

6、鲍鱼香菇鸡汤

材料:

碎鮑魚片(可到參茸藥行購買,一包約12 元8 毛) ，老雞半隻(可請肉舖先去皮去油),或用竹絲雞也可(膠質很多) ，香菇數朵 ，薑少許 ， 鹽少許

做法:

鮑魚片洗淨(不用泡)，香菇泡軟，老雞洗淨川燙 ，另再燒一鍋水,待水滾後將材料全放入,待水開後再轉小火煮3~4 小時,鮑魚片才會軟且入味，上桌前再放鹽即可

偏方/配方：
