I am going to cook some lemony garlicky chicken thighs for dinner tonight and serve artichokes on the side.
But what else would be a good side?My daughter will eat the artichoke but my husband will not.I also want to saute some zucchini in the pan after I cook the chicken,but again the husband will not eat that.He is really more of a meat and potato kind of guy,but I am trying to cook more healthy low cal and low carb.What would you want as a side?Best Answer - Chosen by Asker
Instead of the zucchini,once the chicken is done,saute' chopped onion in the pan drippings,when they are translucent throw a can of drained French Style Green Beans in the pan and heat over high heat while constantly stirring the bean/onion mixture until it is fairly dry but coated; remove from heat and serve.If he likes the chicken made that way,he'll like the beans.I do this but add a teaspoon of Teriyaki sauce and stir fry the bean/onion mixture until most of the moisture is gone.

I'd say salad.With blueberries,walnuts,and feta cheese.Or strawberries.Or something along those lines.
Or maybe saute some squash?Although he's saying no to zucchini,I like zucchini,squash,onions,and some fresh salsa sauted together!Baked potatoes are not that bad.It is the stuff you put on the top.Find a topping that will satisfy your husband and fits into your low cal and low carb menus.salad?baked potato is not unhealthy.I've been doing the whole low-carb thing and my favorite side recipe is Cauliflower Mashed Potatoes..they taste just like mashed potatoes (if you dont tell your daughter or husband I guarantee they will never know).Here my favorite recipe.(The first one is low-carb but not low-cal-- the second is both low-carb and low-cal but is not as good)
"MOCK" GARLIC MASHED POTATOES (low-carb)
Ingredients
* 1 medium head cauliflower
* 1 tablespoon cream cheese,softened
* 1/4 cup grated Parmesan
* 1/2 teaspoon minced garlic
* 1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
* 1/8 teaspoon freshly ground black pepper
* 1/2 teaspoon chopped fresh or dry chives,for garnish
* 3 tablespoons unsalted butter
(can add garlic salt at end if desired)
Directions
Set a stockpot of water to boil over high heat.
Clean and cut cauliflower into small pieces.Cook in boiling water for about 6 minutes,or until well done.Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
In a bowl with an immersion blender,or in a food processor,puree the hot cauliflower with the cream cheese,Parmesan,garlic,chicken base,and pepper until almost smooth.
Garnish with chives,and serve hot with pats of butter.
Hint:Try roasting the garlic and adding a little fresh rosemary for a whole new taste.
SOUTH BEACH MASHED "POTATOES" (low-cal and low carb)
ingredients
* 4 cups cauliflower florets
* 2 tablespoons trans-free butter spray
* 1 ounce fat-free half and half
* Pinch of salt and ground pepper
Place a steamer basket in a large saucepan with 1/2 cup water.Place the cauliflower in the steamer and bring to a boil over high heat.reduce the heat to medium,cover,and cook for 4 minutes,or until crisp-tender.Puree in a food processor,adding the butter spray and the half and half.Season with salt and pepper
