这里could是can的过去式
can't/couldn't stop doing意思是“做某事做得停不下来了,忍不住做某事,情不自禁做某事”
Couldn't stop to do sth.不能停下来去做另外一件事。couldn't stop doing sth.不能停止做某事。去掉couldn't用法类似，只是意思改为肯定。
can't stop doing sth/couldn't stop doing sth 是固定的英文说法，前者为现代一般上，后者为过去一般式，表示“情不自禁，控制不了”想去做谋事，比如：
I can't stop thinking about him.
I could't stop thinking about him
我常常想他 (我忘不了他)。
+ to do sth, 不能停下来，然后做某事
+ doing sth，不能停下来某事。
固定用法：stop to do something (停下来做另外一件事物)；stop doing （停下正在做的事情）。
例如：
I stop to sing. 我停下来唱歌。（本来在做其他事情，停下其他事情，来唱歌。）
I stop singing. 我停止唱歌。（本来在唱歌，停下不唱了。）
